Ingredients

  • 2 1/2 cups nuts of choice (mix of cashews, almonds & pecans)
  • 1/4 cup cacao powder
  • 2 tbsp vegan protein powder
  • 2 tbsp hulled tahini
  • 2 1/2 cups dates, pitted & soaked (reserve water from soaking)
  • 2 tbsp date water (adjust depending on protein powder absorbency)
  • 1/2 cup chocolate chunks
  • 1-2 tbsp melted coconut oil (optional)
  • to taste maple syrup (optional)
  • 1 tsp vegan butterscotch caramel sauce (per ball for filling)

Instructions

  1. 1

In a food processor, blitz the nuts until they resemble a fine flour. Add the cacao powder, vegan protein powder, and tahini, and briefly process to combine.

  2. 2

Add the dates, date water, and optional melted coconut oil. Process until the mixture clumps and sticks together; if it doesn't, add more liquid. Add the chocolate chunks and process a bit more until all mixed in.

  3. 3

Divide the mixture into 12 even balls and roll each into a ball, then flatten.

  4. 4

Spoon a teaspoon of butterscotch sauce into the centre of each flattened ball, then gently fold up the edges and roll it back into a ball.

  5. 5

Refrigerate for at least 30 minutes before serving. Store in an airtight container in the fridge for up to 2 weeks or in the freezer for months.
