Ingredients
- 1.5 cup vital wheat gluten
- 0.5 cup cold vegetable broth
- 0.25 cup soy sauce
- 1 tbsp olive oil
- 2 cloves garlic, pressed or grated on a microplane grater
- 1 tsp lemon zest (optional)
- 4 cup vegetable broth
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 clove garlic, minced
Instructions
- 1
Preheat oven to 350°F.
- 2
Bring 4 cups vegetable broth to a boil in a pot, then turn off heat and keep covered.
- 3
Place wheat gluten in a mixing bowl. Pour cold vegetable broth into a measuring cup, then add soy sauce, olive oil, garlic, and lemon zest, and mix. Pour wet mixture into flour and combine with a wooden spoon until most moisture has been absorbed and mixture is partially clumped.
- 4
Knead the mixture with your hands for about 3 minutes until dough is elastic. Divide into six equal pieces and roll each into a log shape, then slice with a knife.
- 5
Take each piece and stretch and knead it into an oblong cutlet shape that is a little less than 0.5 inch thick. Use body weight to press and stretch on a hard surface; there will be some resistance but keep at it.
- 6
Place cutlets in the boiled broth. Partially cover pot so steam can escape and let simmer for 1 hour, turning seitan occasionally. Turn off heat, take off lid, and let sit for 15 minutes.
- 7
Remove seitan from broth and place in a strainer until cool enough to handle. Seitan is now ready to be sliced and used. Store extra seitan in cooking liquid in a tightly covered container.
- 8
Make the marinade: Whisk together soy sauce, olive oil, and minced garlic in a small bowl.
- 9
For grilling: Preheat greased cast-iron grill pan over medium-high heat. Grill each side of cutlet for 5 minutes. When second side is almost done, spoon some marinade over cutlet and cook 30 more seconds.
- 10
For pan-frying: Preheat heavy-bottomed pan over medium heat. Add about 1 tbsp oil to pan. Cook cutlets for about 10 minutes, turning often and spooning a bit more marinade over as you turn.
- 11
For broiling: Preheat oven to broil. Place cutlets in oven-safe pan and spoon some marinade over. Broil for 5 minutes, flip and spoon more marinade over, and cook another 5 minutes. When second side is almost done, spoon more marinade over and let cook 30 more seconds.
