Ingredients
- 2 cans chickpeas (15 ounces each, rinsed and drained)
- 3 tbsp olive oil
- 1 tsp dried oregano
- 0.5 tsp smoked paprika
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 block feta cheese (8 ounces)
- 0.5 block cream cheese (4 ounces)
- 0.25 cup Greek yogurt
- 1 garlic clove (minced)
- 0.5 tsp lemon zest (from 1/2 lemon)
- 1 tbsp honey
- 0.25 cup water
- 3 tbsp fresh cilantro (chopped)
- to taste crushed red pepper flakes
Instructions
- 1
Drain and rinse the chickpeas. In a large mixing bowl, combine the drained chickpeas. In a separate small bowl, whisk together the olive oil, dried oregano, smoked paprika, salt, and black pepper.
- 2
Pour the olive oil mixture over the chickpeas and toss to coat them evenly. Let the chickpeas marinate while you prepare the whipped feta to allow the flavors to meld together.
- 3
In a food processor, add the feta cheese, cream cheese, Greek yogurt, minced garlic, lemon zest, and honey. Blend until smooth and creamy. If the mixture is too thick, add water a little at a time to achieve the desired consistency.
- 4
Taste the whipped feta and adjust the seasoning if necessary, adding more honey or lemon zest if desired.
- 5
Spread a generous layer of the whipped feta on a serving platter or individual plates. Spoon the marinated chickpeas on top.
- 6
Garnish with crushed red pepper flakes for heat. Optionally, drizzle with extra olive oil and sprinkle with additional smoked paprika or black pepper. Top with fresh chopped cilantro and serve with pita bread, crackers, naan, or fresh vegetables for dipping.
