- 8 cup water (filtered or dechlorinated (chlorine inhibits fermentation))
- 1 tbsp salt (non-iodized sea salt or kosher salt)

Combine the water and salt in a large glass jar (at least 2 quarts). Stir until the salt dissolves completely. This brine creates an environment where beneficial lactobacillus thrives while harmful bacteria cannot.

Add the beet cubes and rye bread pieces to the brine. Stir gently to distribute them evenly. The bread acts as a fermentation starter, introducing wild yeasts and bacteria that will drive the fermentation.

Cover the jar loosely with a clean cloth or coffee filter secured with a rubber band—do not seal it tightly. The fermentation produces CO₂ that must escape, and the cloth prevents dust and insects from entering while allowing air exchange.

Place the jar in a cool, dark spot (65–72°F is ideal; avoid direct sunlight and heat). Over 3–5 days, the liquid will gradually turn deep red and develop a tangy aroma. Taste it daily starting on day 3: it should taste earthy, slightly sweet, and pleasantly sour—not vinegary.

Once the kvass reaches your desired tanginess (usually by day 4–5), strain it through a fine-mesh sieve or cheesecloth into a clean glass bottle, discarding the solids. The liquid should be clear and deep crimson.
