Easy Sourdough Discard Crackers
No rolling pin: spread discard and melted butter thin on a sheet pan, season, score and bake into about five dozen crisp crackers that keep for weeks. Adapted from King Arthur Baking's tested recipe.
Ingredients
- 227 to 241 g unfed sourdough starter (discard)
- 57 g unsalted butter, melted
- 1/2 tsp table salt
- 1/2 to 3 tsp dried herbs or spices (for example black pepper, smoked paprika or za'atar)
- 2 to 3 tsp sesame or poppy seeds, or flaky salt (optional topping)
Instructions

Heat the oven to 325°F and line a baking sheet with parchment.

Stir together the discard, melted butter, salt and seasonings until smooth.

Spread the batter as thin and even as you can over the parchment, to about 11 by 15 inches. Sprinkle on any seeds or flaky salt.

Bake for 15 minutes, until just set.

Take the pan out and score the sheet into 1 1/2-inch squares with a pizza wheel or knife.

Bake again until the crackers in the middle are golden brown and firm to the touch, 35 to 45 minutes. Pull out any edge pieces that brown first.

Cool completely, break apart and store airtight at room temperature.
