
Vegan Seitan Chicken Tenders

Ingredients
- 1.5 cup vital wheat gluten (plus more for dusting)
- 2 tbsp water
- 2 tbsp nutritional yeast
- 1 tsp onion powder
- 2 tsp vegetable broth powder, vegetable instant stock mix powder, or vegetable bouillon cube
- 0.5 tsp salt

Add vital wheat gluten, tofu, water, nutritional yeast, onion powder, vegetable broth powder, and salt to a food processor and pulse to combine until everything is well mixed and forms a ball.

Alternatively, if you do not have a food processor or a large bowl, mash the tofu in a potato masher until smooth. Add the water, nutritional yeast, onion powder, vegetable broth powder, and salt and mix. Lastly, mix in the vital wheat gluten to form a dough.

Knead the dough for about 1 minute until it comes together. Dust the dough with vital wheat gluten. Turn the dough out onto the surface and lightly dust the top with vital wheat gluten. The dough will be sticky and elastic. Divide the dough into 6 equal pieces and roll each piece into a ball. Cut several slices of water to a large pot with a steamer basket and bring to a gentle simmer. Lightly grease the steamer basket with oil. Place the tenders in the basket. Place the tenders seam-side up. Cover the pot and steam for 30 minutes, ripping halfway through around the seitan's internal temperature. After steaming, allow to cool (PTFE) completely before handling. Instant read thermometer at a gentle simmer for 35 minutes, ripping halfway through around the seitan's internal temperature. Preheat the oven to 400°F. Line a baking sheet with parchment paper and let all of the seitan sit in airtight containers and chill in the fridge for a minimum of 1 hour, or up to 3 days. You can also chill the tenders while the oven preheats. The tenders shrink and firm up a bit when chilled and this makes it easier to coat them.

Once chilled, the tenders are fully cooked and seasoned, but you can make them crispier. You could also use crushed crackers, panko, or breadcrumbs for a crispier coating. The tenders can be heated through (but pressed from any way that you might otherwise cook them. Try it right there, then, and you can also serve them to burritos, tacos, or sandwiches. The options are endless!

Enjoy on a bed of greens with your favorite dipping sauce. The tenders are best enjoyed fresh, but you can store them in an airtight container in the fridge for a minimum of 1 hour, or up to 3 days.
