
Sautéed Spinach with Sesame Dressing

Ingredients
- 11 oz baby spinach
- 2 tbsp water
- 3 tbsp sesame seeds (lightly toasted and cooled, divided)
- 1/4 cup peanut oil (or sunflower or olive oil)
- 1 tsp honey
- 2 tsp soy sauce
- 1 tsp toasted sesame oil (optional)

Toast the sesame seeds in a skillet over medium heat, stirring constantly for 3–5 minutes until lightly browned and fragrant. Transfer to a bowl and allow to cool.

In the same skillet, add the spinach and 2 tablespoons of water. Sauté until the spinach is just wilted and tender, about 2–3 minutes.

Transfer the spinach to a colander and rinse briefly under cold water to stop the cooking process. Squeeze out as much excess liquid as possible, then place the spinach in a shallow serving bowl.

Make the dressing by adding 2 tablespoons of toasted sesame seeds to a blender and blending until slightly broken down, about 30 seconds. Add peanut oil, honey, soy sauce, and toasted sesame oil (if using). Blend until smooth and well combined.
