Ingredients
- 2 heads cauliflower (chopped into florets)
- 3 tbsp avocado oil (divided - 2 tbsp for coating cauliflower, 1-2 tbsp for sauce)
- 1.5 tsp salt (divided - 1 tsp for cauliflower, 0.5 tsp for sauce)
- 1/4 tsp black pepper (to taste)
- 6 cloves garlic cloves (divided - 4 minced for cauliflower coating, 2 minced for sauce)
- 2.5 tbsp cornstarch (for crispy coating)
- 1 medium yellow onion (roughly chopped for sauce)
- 1.5 tbsp fresh ginger (minced (approximately 1-2 thumbs))
- 1 tsp Dijon mustard
- 1.5 tsp tamari or soy sauce (divided - 1 tsp in sauce, splash for finishing)
- 1.5 tsp maple syrup (minced)
- 1 tbsp rice vinegar
- 1/4 cup sesame seeds (white or mix of white and black)
- 2 tbsp fresh lemon juice (from approximately 1 lemon)
- 2 tbsp miso paste (white or red miso)
- 1 tbsp toasted sesame oil

Preheat Oven: Set oven to 450°F (446°F).

Prepare Cauliflower: In a bowl, coat chopped cauliflower with avocado oil, 1 tsp salt, pepper, and 4 minced garlic cloves. Mix well. Add 2-3 Tbsp cornstarch and mix again.

Bake Cauliflower: Spread cauliflower in a single layer on a sheet pan. Bake at 450°F for 20 min, or until golden and crispy.

Make Sauce: Blend 1 onion, 2 garlic cloves, 1 tsp Dijon, 1 tsp tamari, 1-2 thumbs ginger, 1-2 Tbsp avocado oil, 1.5 tsp maple syrup, 1/2 tsp salt, 1 Tbsp rice vinegar, and 1/4 cup sesame seeds until smooth. Cook in a saucepan over medium heat until thickened. Stir in lemon juice, 2 Tbsp miso, a splash of tamari, and 1 Tbsp toasted sesame oil.
