Ingredients
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1/2 cup fresh mint leaves (loosely packed, roughly 15-20 leaves)
- 1/2 cup fresh coriander leaves (loosely packed, roughly 15-20 leaves)
- 1 whole green chilli (approximately 3/4 roughly chopped for blending, remainder sliced for garnish)
- 200 g Greek yogurt
- 2-3 tbsp water (add gradually to reach desired consistency)
- 1 whole lime (juiced, approximately 2-3 tbsp juice)

Instructions

Toast the cumin seeds and mustard seeds in a dry pan over medium heat until fragrant, about 1-2 minutes.

Tip the toasted spices into a mortar and grind to a fine powder with a pestle.

Transfer the ground spices to a food processor with the mint, coriander, green chilli, and Greek yogurt. Blitz until smooth, adding a splash of water to reach your desired consistency.

Season to taste and finish with lime juice, stirring to combine.

Transfer to a serving bowl and refrigerate until ready to serve.
