- 1/2 cup protein powder (use your favorite flavor)
- 4 large eggs (room temperature)
- 2/3 cup cocoa powder (unsweetened)
- 1/4 cup coconut oil (melted)
- 1/2 cup coconut flour
- 3/4 cup sweetener (your preferred sweetener)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 cup chocolate chips (or chopped dark chocolate)

Preheat your oven to 350°F (356°F). Lightly grease a muffin tin or line it with paper muffin liners to prevent sticking. Set aside.

In a blender or food processor, add the cottage cheese and blend until smooth and creamy. Scrape down the sides as needed.

Add the eggs, melted coconut oil, and vanilla extract to the blender and blend again until everything is well combined.

To the same blender, add the protein powder, cocoa powder, coconut flour, sweetener, and baking powder. Blend until the batter is smooth, making sure all ingredients are fully incorporated.

Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full. If you love extra chocolate, sprinkle a few more chocolate chips on top!
