Ingredients
- 1/2 medium yellow onion (very finely diced)
- 3.5 cup all purpose flour
- 1/3 cup sugar
- 1-2 tsp salt
- 2 tsp onion powder
- 2 tbsp active dry yeast
- 1.25 cup hot water (around 100-110 degrees)
- 1 tbsp flax egg (1 tablespoon flax meal or starch mixed with 3 tablespoons water)
- 1/3 cup neutral flavored oil (used grape seed oil)
Instructions
- 1
In a medium skillet, sauté the diced onion with 1 teaspoon oil and a pinch of salt over medium heat until soft and beginning to brown, about 5-7 minutes. Set aside to cool.
- 2
In a glass bowl, combine yeast, hot water, and 1 tablespoon sugar. Let sit for 10 minutes until foamy; if it doesn't bubble, the yeast may be dead or the water was too hot.
- 3
In a stand mixer bowl, combine flour, salt, and remaining sugar. Once the yeast mixture is foamy, stir in the flax egg and oil, then add the wet mixture to the dry ingredients.
- 4
Mix on medium speed for 5 minutes until the dough is soft but not sticking to the sides; adjust with water or flour as needed. (Alternatively, mix by hand on a clean counter and knead for 5 minutes.)
- 5
Divide the dough into 9 equal pieces (or 12 for smaller buns) and form each into a disk without flattening. Place on a parchment-lined baking sheet and press the cooled caramelized onions into the tops of each roll.
- 6
Preheat the oven to 425°F and let the buns rest for 10 minutes while the oven heats.
- 7
Bake for 10-15 minutes until golden brown, rotating the baking sheet halfway through if needed for even browning.
- 8
Cool the buns before serving. Store any leftovers in a freezer zip-lock bag for up to one month.
