Ingredients
- 2 cup whole wheat flour (spooned & leveled, 260g)
- 1 tbsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 6 tbsp unsalted butter (melted and slightly cooled, 85g)
- 2 eggs large eggs (at room temperature)
- 2 tbsp packed light brown sugar (25g)
- 1 and 3/4 cup buttermilk (420ml)
- 1 tsp pure vanilla extract

Preheat the waffle maker on medium-high heat and preheat the oven to 200°F (199°F). Place a wire rack on a baking sheet and set aside.

In a large bowl with a pour spout, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

In another large bowl, whisk together the melted butter, eggs, and brown sugar. Whisk in the buttermilk and vanilla until combined.

Pour the wet ingredients into the dry ingredients and whisk gently until just combined; some small lumps are OK. Do not over-mix.

Grease the preheated waffle maker with nonstick spray. Pour about 1/3 cup of batter into each well and close the lid.

Cook the waffles until crisp, about 4–5 minutes, following your waffle maker's instructions. Transfer the cooked waffles to the wire rack and keep warm in the oven.

Repeat with the remaining batter, greasing the waffle maker and cooking each batch until crisp.
