Ingredients
- 14 oz extra-firm tofu (pressed and cut into 3/4-inch cubes)
- 1 can black beans (drained and rinsed (15 oz))
- 1 medium onion (sliced into thin half-moons)
- 4 cloves garlic (minced)
- 3 cup cabbage (thinly sliced)
- 2 medium carrots (cut into thin matchsticks)
- 1.5 cup green beans (trimmed and halved)
- 1 cup frozen corn
- 3 tbsp soy sauce
- 1.5 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp ginger (minced)
- 3 tbsp neutral oil
- 1 tsp sesame oil
- 2 stalks scallions (sliced thin)
- 1 tbsp sesame seeds

Press the tofu between paper towels under a heavy weight for 10 minutes to remove excess moisture, then cut into 3/4-inch cubes. Whisk together soy sauce, rice vinegar, honey, and ginger in a small bowl; set the sauce aside.

Heat 2 tbsp neutral oil in a large wok or skillet over medium-high heat (375–400°F) until shimmering. Working in batches to avoid crowding, add tofu cubes and sear without moving them for 3–4 minutes per side until golden and crispy on all edges. Transfer to a plate.

Add the remaining 1 tbsp oil to the pan. Add sliced onions and cook over medium heat, stirring occasionally, for 5–6 minutes until softened and lightly caramelized at the edges.

Stir in minced garlic and ginger, cooking until fragrant, about 30 seconds. Add carrots and green beans, then stir-fry over medium-high heat for 3–4 minutes until the vegetables begin to soften but still have a slight bite.
