- 1 1/4 cup packed light brown sugar
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 3/4 cup cocoa powder (Dutch processed preferred for deeper flavor)

- 1/2 tsp salt
- 1/4 tsp baking soda

In a large microwave-safe bowl, combine butter and sugar. Microwave for 30 seconds, then remove and stir with a whisk. Repeat the microwave and stir process 2 more times until the mixture reaches a glossy finish, though some sugar granules may remain.

Allow mixture to cool slightly, then add eggs one at a time, whisking between each addition until the mixture lightens in color slightly.

Add cocoa powder, salt, baking soda, and vanilla extract to the mixture, then fold in flour until just combined.
