Sourdough Discard Crumpets
Almost all discard: a cup of unfed starter becomes four or five holey, buttery crumpets in about ten minutes on the stovetop. Adapted from King Arthur Baking's tested recipe.
Ingredients
- 227 g unfed sourdough starter (discard)
- 1 tsp granulated sugar
- 1/4 to 1/2 tsp table salt
- 3/8 tsp baking soda (up to 1/2 tsp if your starter is very sour)
- butter (for greasing the rings and griddle)
Instructions

Heat a griddle or heavy pan to 300°F (medium-low). Grease four or five 4-inch English muffin rings and the cooking surface with butter.

Stir the discard, sugar and salt together, then stir in the baking soda. The batter will foam and rise; use it right away.

Set the rings on the griddle and spoon in about 1/4 cup of batter each.

Cook until the tops are set and covered in small holes, about 5 minutes.

Lift off the rings, flip the crumpets and cook until the second side is golden, about 3 minutes more. Serve warm with butter.
