Ingredients
- 4 cups water
- 1 cup uncooked lentils
- 1 tbsp olive oil
- 1 whole yellow onion, medium-size (cut into small dice)
- 1 whole green bell pepper (seeded and cut into small dice)
- 2 cloves garlic cloves (minced)
- 3 tbsp chile powder
- 2 tsp dried oregano
- 1 tsp salt
- 1 8-oz can tomato sauce
- 1/4 cup tomato paste
- 4-6 buns burger buns or bread (for serving)
Instructions
- 1
Bring water to a boil in a pot. Add uncooked lentils and simmer until tender, about 20–25 minutes. Drain and set aside.
- 2
Heat olive oil in a large skillet over medium heat. Add diced onion and green bell pepper, sauté until softened, about 5 minutes. Add minced garlic and cook for about 1 minute until fragrant.
- 3
Stir in chile powder, dried oregano, and salt. Cook for 1–2 minutes to bloom the spices.
- 4
Add the cooked lentils, tomato sauce, and tomato paste to the skillet. Stir well to combine.
- 5
Simmer the mixture over medium-low heat for 15–20 minutes, stirring occasionally, until the sauce thickens and flavors meld together.
- 6
Taste and adjust seasonings as needed. Serve warm on burger buns or bread.
