  • 1 lb celeriac (peeled, cut into 1-inch cubes)
  • 1 lb carrots (cut into 1-inch chunks)
  • 1 bulb fennel (trimmed, cut into 1-inch wedges)
  • 4 cup green cabbage (roughly chopped)
  • 2 cup purple cabbage (roughly chopped)
  • 1.5 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 leaf bay leaf

  • 3 tbsp lemon juice
  • 3 tbsp fresh parsley (chopped)

    Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Add diced onion and cook for 4–5 minutes, stirring occasionally, until softened and beginning to caramelize at the edges. Add minced garlic and cook for 30 seconds until fragrant.

    Stir in tomato paste and cook for 2 minutes, stirring constantly, until it darkens and smells sweet—this builds umami depth. The paste should stick slightly to the bottom of the pot.

    Add the celeriac, carrots, and fennel wedges. Stir to coat with the oil and tomato paste, then cook for 3–4 minutes without moving them around too much—let them develop a light golden color on the cut sides. This caramelization adds sweetness and depth.
