  • 2 large green chilies (roughly chopped)
  • 1 clove garlic cloves (peeled and roughly chopped)
  • 1 stalk lemongrass (roughly chopped)
  • 2 leaves kaffir lime leaves
  • 3 cm fresh ginger (peeled and chopped)
  • 1/4 cup fresh coriander (loosely packed, roughly chopped)
  • 1 small shallot (peeled and chopped)
  • 2 tablespoons lime juice (freshly squeezed)
  • 300 g cooked basmati rice (preferably day old or chilled at least 4 hours)
  • 2 tablespoons vegetable oil (for cooking)
  • to taste sea salt (to taste)
  • to taste freshly ground black pepper (to taste)
  • 1 lime lime wedges (for serving)

Instructions

    Combine all curry paste ingredients (green chilies, garlic, lemongrass, kaffir lime leaves, ginger, coriander, shallot, and lime juice) in a blender or food processor and blend until a smooth paste forms.

    Heat vegetable oil in a large wok or skillet over medium-high heat.

    Add the curry paste and stir-fry for 1-2 minutes until fragrant.

    Add the cooked basmati rice and stir-fry, breaking up any clumps, until the rice is heated through and well coated with the curry paste, about 3-4 minutes.
