Ingredients

  • 2 recipes pizza dough (Easy pizza dough recipe or white garlic crust or gluten free crust)
  • 3 tbsp hot sauce
  • 1.5 tbsp Sriracha hot sauce
  • 15 oz chickpeas (canned or 1.5 cups cooked)
  • 0.5 cup ground cashew
  • 0.75 cup almond milk
  • 0.67 tsp salt
  • 1 dash black pepper (very generous)
  • 4 cloves roasted garlic cloves (or 1 tsp garlic powder)
  • 1 tbsp extra virgin olive oil
  • 0.25 tsp onion powder
  • 1 tsp apple cider vinegar
  • 0.5 tsp ranch seasoning
  • 0.5 tsp celery seeds
  • 2 tsp extra virgin olive oil (for brushing dough)
  • 1 cup spinach or greens (or other veggies of choice)
  • 1 cup celery (generous amount)
  • 1 cup vegan mozzarella cheese (shreds, optional)

Instructions

  1. 1

Make the pizza dough according to recipe. Use double the pizza dough recipe to make 2 pizzas.

  2. 2

Make the Buffalo chickpeas: Combine the chickpeas, hot sauce, and Sriracha hot sauce. Mash a few chickpeas and let sit and marinate while you prep the sauces.

  3. 3

Make the White sauce base: Blend the ground cashew, almond milk, salt, and black pepper until well combined into a smooth sauce.

  4. 4

Make the White Garlic sauce: Take about 2/3 of the white sauce and add the roasted garlic cloves, 1 tbsp extra virgin olive oil, and onion powder. Mix well. Taste and adjust as needed.

  5. 5

Make the Celery Ranch: Add the ranch seasoning, celery seeds, and apple cider vinegar to the remaining 1/3 of the white sauce and mix well.

  6. 6

Shape the pizza dough to a 10 inch round with thick edges so the sauce does not flow off the pizza during baking. Brush 2 tsp olive oil on the dough. Drizzle enough garlic sauce on the dough to coat. Add spinach or greens and celery.

  7. 7

Layer buffalo chickpeas on the greens. Drizzle some buffalo sauce from the marinade.

  8. 8

Drizzle a generous amount of celery ranch over the veggies. Add vegan mozzarella cheese shreds if using.

  9. 9

Bake at pre-heated 425°F / 428°F for 14 minutes. Broil for a minute to crisp.

  10. 10

Drizzle any leftover garlic sauce or celery ranch before serving.
