Ingredients

  • 10-14 pods green cardamom pods (lightly crushed)
  • 6-8 cloves whole cloves (lightly crushed)
  • 2-4 pods star anise (optional, lightly crushed)
  • 10-14 peppercorns peppercorns (optional, lightly crushed)
  • 2 cup water
  • 4-6 slices ginger (skins ok, muddled slightly)
  • 1 stick cinnamon stick (split lengthwise using fingers)
  • 4-6 tbsp black tea, loose leaf (or 2-4 tea bags; can substitute decaf black tea)
  • 2 cup milk (almond, oat, soy, cashew, hemp, macadamia, or organic whole milk; unsweetened vanilla-flavored almond or oat milk recommended)
  • 4-6 tsp maple syrup, honey, sugar, or alternative (to taste; sugar is traditional but maple syrup is also popular)

Instructions

    Lightly crush cardamom, cloves, star anise, and peppercorns. Place in a small pot with 1 cup of water. Add ginger, cinnamon, and black tea. Muddle the ginger slightly.

    Bring to a boil. Turn off heat and let seep for 10 minutes or several hours (longer steeping yields more flavor).
