Ingredients
- 4 cloves garlic cloves (minced)
- 2 cans (15 oz) black beans (drained and rinsed)
- 1 cup water
- 3 tbsp lemon juice (fresh)
- salt (to taste)
- black pepper (to taste)
- 2 tbsp olive oil
Instructions
- 1
Heat olive oil in a medium saucepan over medium heat. Add minced garlic and cook, stirring frequently, until fragrant and just beginning to turn golden, about 1–2 minutes. Do not let it brown.
- 2
Add the drained black beans and water to the pan. Stir to combine and bring to a gentle simmer.
- 3
Reduce heat to medium-low and simmer uncovered for 25–30 minutes, stirring occasionally. The beans will soften further and the liquid will reduce slightly, concentrating the garlic flavor.
- 4
Remove from heat and stir in the fresh lemon juice. Taste and season with salt and black pepper to your preference.
- 5
Let rest for 2 minutes before serving. The beans will continue to absorb the flavors as they cool slightly.
