
Black Bean and Butternut Squash Skillet
A hearty one-pan dish combining tender butternut squash and black beans with aromatic spices, perfect for a nutritious weeknight meal.
Ingredients
- 3 tbsp sunflower oil (or extra virgin olive oil)
- 1 tsp ground cumin
- 1 whole onion (chopped)
- 4 cloves garlic cloves (minced)
- 4 cup butternut squash (cut into 1/2-inch cubes)
- 2 tsp salt (adjust to taste)
- 1.5 cup cooked black beans (about one 15-ounce can, drained and rinsed)
- 0.25 cup water

Sauté the Aromatics. Heat the oil in a large sauté pan over medium-high heat. Once hot, add the cumin and chopped onion. Sauté for about 2 minutes, until the onion begins to soften and becomes fragrant.

Add Garlic and Squash. Stir in the minced garlic and cubed butternut squash. Cook for 6–8 minutes, stirring occasionally, until the squash begins to soften.

Add Beans and Simmer. Add the black beans, salt, and 1/4 cup of water. Stir to combine. Cover the pan and cook for 10 minutes, or until the squash is tender.
