  • 1 block extra firm tofu (roughly 12 oz / 350g size block)
  • 2/3 cup water
  • 1 tbsp olive oil
  • 1 cup vital wheat gluten (plus 3 tbsp)
  • 1 tbsp faux chicken flavor (Better Than Bouillon Not-Chicken or similar; optional but recommended for taste)
  • 2 tsp onion powder
  • 2 tsp garlic powder

Instructions

    Drain water from tofu package.

    Purée tofu with water and olive oil.

    Mix vital wheat gluten, faux chicken flavor, onion powder, and garlic powder together in a separate bowl.

    Combine puréed tofu with dry ingredients.

    Knead until all powder is absorbed.

    Let sit for 1 hour.

    Put in food processor until thick and gooey, about 1-2 minutes.

    Break into halves.

    Wrap each half individually in parchment paper followed by aluminum foil.
